Wild Nettle Soup

You can find nettles everywhere but preferably pick ones that are growing in the countryside away from dense pollution. Choose small & medium sized leaves as they will be more tender. Wear leather gloves or you'll be in pain from the stings!

2 Servings
Ingredients:
3L freezer bag of nettle leaves
1 small potato, finely sliced
1 small onion, finely sliced
2 tbsp butter
1 tsp celery salt
Pepper
1 tbsp cream
Instructions:
Melt butter on low heat & simmer onion & potato for a couple of minutes before adding the nettles. Add boiling water to nearly cover contents of the pot & boil 5-10 minutes or until potato slices are cooked.
Add celery salt, pepper & cream.
Blend until smooth.
