Warm Baby Vegetable Salad

This is a great side dish for grilled meat or fish, and can also be served as a starter. Its one that is great in winter, as it is a warm salad that uses seasonal vegetables, though I also make this recipe with asparagus in spring.

2 Servings
Ingredients:
8-10 baby leeks
6-8 baby broccoli
1 egg, hard boiled, shells removed & roughly chopped
1 tbsp mustard
3 tbsp apple cider vinegar
10 tbsp olive oil
S&P
Instructions:
Boil the baby veg until just cooked but still firm.
Drain well & place on two plates.
Scatter over the warm chopped egg.
In a bowl, create your vinaigrette by combining the mustard, vinegar, S&P.
Slowly add in the olive oil, mixing constantly.
Drizzle the vinaigrette over the salad.
