Vegan Mediterranean Pasta

This recipe was created by chance, when I had quite a few left over ingredients from previous recipes I had done. It turned out so tasty that it has become a favorite dish for our meat-free day each week.



4 Servings


Ingredients:

2 cloves of garlic, finely chopped

130gr sun-dried tomatoes, chopped

600gr tinned tomatoes, crushed by hand

Fresh oregano or marjoram

70gr olives, sliced

15gr capers

A pinch of cayenne pepper

S&P

Spaghetti or other pasta


Instructions:

Heat a generous drizzle of olive oil in a pan, on medium low heat. Add the garlic & sun-dried tomatoes & simmer for 3 minutes.

Add the crushed tinned tomatoes, oregano, olives, capers, cayenne pepper, S&P.

Simmer for 5 minutes before tossing with freshly cooked pasta.
