Turkey & Mushroom Stir Fried Rice

This quick meal is great when you are in a rush but fancy something full of flavour. It is best served with finely sliced cucumber slices, topped with a fried egg & some pickled chillies on the side.

2 Servings
Ingredients:
1 onion, finely chopped
2 cloves of garlic finely chopped
350gr turkey breast, finely diced
1 carrot, finely chopped
2 tbsp light soy sauce
1 tbsp dark soy sauce
3 tbsp rice vinegar
250 gr mushrooms, finely chopped
3-4 cups of rice, or enough for 2 servings
2 tbsp oyster sauce
Instructions:
Heat oil in a wok on high heat, stir fry onion & garlic for 1 minute then add the turkey & fry a further 2 minutes. Add carrot & fry another minute.
Add both soy sauces & the rice vinegar.
Add the mushrooms & continue to stir fry for 3-5 minutes on medium high heat.
Add rice & oyster sauce. Stir well for a minute.
