Tian Provençal

Tians are marvellous Provencal vegetable bakes, so simple to make, as are so many dishes that originate from the south of France. Tians can be made with many different vegetables but this one is my favourite combination. The vegetables are all sliced horizontally to create thin circular pieces arranged in a crown on a circular baking tray. They really are the stars of the show & a beautiful side dish to any grilled meat or fish!

Ingredients:
1 aubergine, finely sliced
1 courgette, finely sliced
1 red onion, finely sliced
3 tomatoes, finely sliced
1 clove of garlic, peeled
Olive oil
S&P
2 twigs of fresh thyme
Instructions:
Preheat oven to 200c.
Once all the vegetables are sliced, rub the bottom and side surfaces of a circular oven tray with the garlic clove. Add a generous drizzle of olive oil to the tray & arrange vegetables one by one in a crown like shape, alternating between each vegetable.
Sprinkle salt, pepper & fresh thyme over the top, along with another generous drizzle of olive oil.
Bake for 30 minutes & enjoy!
