Tabbouleh

There is nothing I love more than a fresh, cool tabbouleh salad on a hot summer day. This recipe is a fabulous side dish to the Moroccan Meatball recipe I share in this blog.



4 Servings


Ingredients:

2 tomatoes, de-seeded & finely diced

2 stalks of fresh mint, leave removed and finely chopped

2 spring onions, finely chopped

1 bunch of parsley, very finely chopped

500gr couscous, cooked & cooled to room temperature

A generous drizzle of olive oil

Juice of 1 lemon

S&P


Instructions:

Simply combine all ingredients & refrigerate until serving.
