Sweet Potato Hummus

Hummus is a healthy dip that is so versatile. It can be used in wraps & sandwiches, or it can be served on its own as a dip with tortillas, rice crackers or toasted pitta bread. I do love to spread it across rice crackers & top it with pickled chillies, marinated artichoke, fresh tomato or cucumber slices. The options are truly endless!

4-6 Servings
Ingredients:
200gr chickpeas
200gr cooked sweet potato
100ml tahini
Juice of 1 lemon
2 cloves of garlic, roughly chopped
4-6 tbsp olive oil
1 tsp cumin
1 tsp paprika
S&P
Instructions: Add all ingredients to a blender & blend until smooth. Place in a bowl and sprinkle paprika over the top before serving.
