Summery Potato Salad

The perfect side dish for barbecues or any grilled meat or fish.



4 Servings


Ingredients:

500gr potatoes, cut into small cubes

50gr cornichon pickles, sliced

100gr bacon lardons

20gr spring onion, finely chopped

5 tbsp mayonnaise

Pepper

Juice of 1/2 a lemon

Fresh parsley


Instructions:

Boil potatoes until cooked but still firm. Dunk into icy water to prevent from cooking further & allow to drain well.

Fry the lardons until crispy.

Ensure the potatoes are no warmer than room temperature before combining all ingredients.

Mix well, sprinkle fresh parsley over the top & refrigerate until serving.
