Spicy Aubergine Pasta

Like every decent cook, I am not beyond stealing recipes, particularly from family members. My brother has been staying with me this week & offered to cook us a pasta he had thrown together a few weeks prior. I found it so flavourful & delicious, I just had to share it.

4 Servings
Ingredients:
1 onion, finely sliced
1 aubergine, finely sliced into thin strips
300gr lardons
1/2 tsp Herbes de Provence
250gr cherry tomatoes, halved
1 large clove of garlic, peeled
70gr sundried tomatoes, halved
400gr arrabbiata sauce
400gr linguini pasta
Fresh basil
Parmesan
Instructions:
Place a large pot of water to boil on medium heat with a generous pinch of salt.
In another pot, simmer the onion on low heat with a drizzle of olive oil until soft & golden. Set aside on a plate.
Add the aubergine to the pot & simmer until tender, then set aside with the onion.
Add the lardons to the pan and fry on medium heat until crispy & cooked through.
Return onions & aubergine to the pot & add the cherry tomatoes.
Simmer on low heat 5 minutes then add the arrabbiata sauce, garlic, sundried tomatoes & 4 leaves of basil, roughly torn.
Leave to simmer another 5 minutes while you add the linguini to the pot of boiling water & cook to desired tenderness, as per the instructions on the box.
Remove the whole garlic from the sauce if desired.
Drain the pasta & serve with a generous helping of spicy aubergine sauce, a sprinkle of parmesan & fresh basil.
