Saucisse de Morteau with Lentils

Saucisse de Morteau is a smoked sausage from the commune of Morteau, in the Franche-Comté region. It has a very intense flavour that really does pair amazingly with lentils & other pulses. If you don't have access to this precise sausage you can replace it with another smoked, cooked sausage.



2 Servings


Ingredients:

1 red onion, finely chopped

1 stalk of celery, finely chopped

1 carrot, sliced

1 garlic, finely chopped

250gr lentils

2 sprigs of thyme

2 bay leaves

1 tsp Dijon mustard

S&P

1 Saucisse de Morteau


Instructions:

Heat olive oil in a pot & add the onion.

Simmer on medium heat for 3 minutes.

Add the celery, carrot, garlic, lentils, thyme, bay leaves, mustard, S&P.

Cover with water, bring to a boil, cover with a lid & allow to simmer 10 minutes.

Add the sausage & simmer another 30 minutes.

Slice the sausage before serving.
