Sauce Chien

In English this Creole dish translates as 'Dog Sauce'. The recipe requires a lot of chopping so they named this dish after a knife brand, 'Chien' (dog in French) that is very popular on these islands. It is an incredibly intense sauce that is popular on many of France's creole islands such as Reunion Island, Mayotte, Guadeloup & the Antilles. The recipe can vary from island to island & from family to family, but key ingredients are present throughout from onions (be it regular onion or a combination of onion & shallot, or onion & spring onion), garlic, chillies & parsley. The rest is open to interpretation, with acidity being brought in through either lemon, limes or vinegar. The oil & boiling water are non negotiables as well, with the heat of the water aiding the ingredients to marinate together. Ingredients:
4 stalks of parsley, leaves only, finely chopped
1 tbsp chives, finely chopped
2 cloves of garlic, minced
1 chilli, finely chopped
1 onion, finely chopped
Juice of 1 lime
5 tbsp sunflower oil
10cl boiling water
S&P
Instructions:
Combine all ingredients ending with the boiling water. Mix well & allow to marinate together for minimum 30 minutes before serving.
