Salmon & Lentil Salsa

This recipe is the perfect power lunch to recharge your body with goodness, & only takes 20 minutes to whip together. I've added it to the 'vegan' category as well as the lentil salsa is lovely on its own or accompanied by grilled tofu or other vegan protein side.



2 Servings


Ingredients:

1 large 800gr tin of cooked lentils

10 cherry tomatoes, quartered

1/2 red onion, finely sliced

15gr bunch of coriander, finely chopped (leaves only)

Juice of 1 lime

1 clove of garlic, minced

4 tbsp olive oil

S&P

2 fresh, boneless salmon fillets (roughly 250gr combined weight)

Olive oil for frying salmon


Instructions:

Combine all ingredients except the last two. Toss well.

Heat a drizzle of olive oil in a pan on medium heat.

Fry, skin down, 4 minutes while gently holding flat to ensure even crisping.

Turn & fry the other side 3-4 minutes or until cooked through.

Serve warm salmon immediately with a side of lentil salsa.
