Prawn Salsa

This tangy, fresh salsa is a perfect hors d'oeuvre on a warm sunny day. I love tucking into it with tortilla crisps though you could also serve it in shot glasses with a mini teaspoon, or as a filler in a freshly baked baguette or an avocado sliced in half. The key is to chop everything as finely as you can!

2 Servings
Ingredients:
1 mild chilli, finely chopped
1 tomato, deseeded & finely chopped
2 inches of cucumber, peeled, deseeded & finely chopped
1 shallot, peeled & finely chopped
The dark green part of 2 spring onions, finely chopped
150gr cooked, cold prawns, finely chopped
The juice of 1 lime
1-2 tbsp mayonnaise
S&P
Instructions:
Simply combine all ingredients & serve cold.
