Beautiful roasted Creole chicken. Having lived on the creole island of Reunion, I fell in love as a teenager with the incredible flavours of Creole cuisine. You can use this marinade for chicken wings & thighs, or a whole chicken, which I spatchcocked in this recipe. 4 Servings
Ingredients:
4 cloves of garlic, roughly chopped
4 cloves
2 cm ginger, grated
4 sprigs of thyme, twigs removed
4 tbsp soy sauce
2 tbsp oyster sauce
1 tsp curcuma
1 tbsp oil
1/2 tsp pepper
Instructions:
Place the garlic, cloves, ginger & thyme in a pestle & mortar. Grind until a smooth paste.
Combine with soy sauce, oyster sauce, curcuma & oil.
Rub the marinade on all sides of your choice of chicken & allow to marinate for 2 hours.
Bake at 200c for 45-60 minutes or until cooked through.
