Poulet Grand-Mère (Grandmother Chicken)

This simple yet comforting dish is great example of French home cooking and goes beautifully with roasted or mashed potatoes.

4-6 Servings
Ingredients:
1 whole chicken, cut into 6-8 pieces
200gr bacon lardons
200gr mushrooms, sliced into halves
1 onion, finely chopped
20 gr butter
25cl white wine
40cl water
1 chicken stock cube
1 heaped tbsp cornflour
Fresh parsley to serve

Instructions:
Heat a drizzle of olive oil in a large pot on medium heat. Add the chicken pieces & brown on all sides before removing from the pot & setting aside.
Add the butter & onion to the pot & simmer for 5 minutes.
Add the lardons & mushrooms & simmer a further 5 minutes.
Raise the heat to high & add the white wine.
Allow the wine to boil on high for a minute before adding the water, stock cube & seasoning with pepper.
Return the chicken to the pot, cover & simmer on low heat for 45 minutes.
Mix the cornflour with a little cold water & add to the pot.
Mix well before allowing the sauce to thicken, uncovered, for 15 minutes.
Add salt if needed.
Serve with a sprinkle of finely chopped fresh parsley.
