Mediterranean Fish Bake

Healthy, colourful & utterly delicious, this fish recipe does a great job representing the delights of Mediterranean cuisine. I often accompany this dish with quinoa, boulgour wheat or rice.



4 Servings


Ingredients:

4 skinless, boneless cod fillets (or other firm white fish)

300gr cherry tomatoes, sliced in halves

50gr pitted black olives, sliced

50gr pitted green olives, sliced

1 red onion, finely chopped

2 cloves of garlic, finely chopped

The leaves of 2 sprigs of oregano or marjoram

2 sprigs of thyme, twigs removed

Juice of 1 lemon

S&P

A generous glug of olive oil


Instructions:

Heat oven to 220c.

Place fish fillets in a deep oven tray.

Combined all other ingredients. Mix well & scatter on top of fish fillets.

Bake for 15-20 minutes or until fish is cooked.
