Leek Fondue

This recipe is quick & easy to make; a great way to use leeks, which are incredibly cheap here in France during the winter period. This is a great side dish to accompany fish or meat, with its tangy flavour & creamy texture, it is a great match with potatoes & rice as well.

2-4 Servings
Ingredients:
2 leeks, finely sliced
2 tbsp butter
2 tbsp lemon juice
1 tbsp Dijon mustard
2 tbsp cream
S&P
Instructions:
Melt the butter in a pot on low heat and add the leeks.
Cover with a lid & simmer, stirring occasionally, for 20 minutes.
Add the remaining ingredients & simmer, still covered & stirring regularly, for an additional 10 minutes.
