Grillée de Mogettes

Consider this France's version of our British neighbours' famous 'Beans on Toast'.

Here in the French Vendée department, where I am originally from, we love our Mogettes beans. This is one classic, simple way that it is served though it can be used in any recipe that includes white beans, and it pairs well with grilled sausages. And vice versa. You can prepare this recipe using other white beans.


4 Servings


Ingredients:

200gr Mogettes beans

50gr butter

4 cloves of garlic, peeled but left whole

4 thick slices of rustic bread or baguette

4 slices of ham

Instructions:

Soak the beans overnight in cold water.

Drain, rinse & add to a large pot.

Pour in cold water until it reaches 2 cm above the beans. Do not add salt at this point.

Bring to a boil then drop to low heat & simmer the beans for 2 hours.

Season with salt & add butter, stirring until it has melted into the sauce.

Grill bread in a pan on high heat.

Place bread on a plate accompanied by a slice of ham.

Ladle the Mogettes beans over the bread & sprinkle pepper over the top.
