Greek Salad

This one is a classic. Colourful, fresh & healthy, it is up there as one of the best salads to accompany barbecued meats or grilled fish. I find it is great on its own as a light lunch on a hot summer's day.

4 Servings
Ingredients:
1 small cucumber, cubed
2 tomatoes, cubed
1 green pepper, cubed
1/2 red onion, sliced
150gr feta, cut into 1cm cubes
100gr black, pitted Greek olives
1/4 cup of olive oil
2 tbsp red wine vinegar
A pinch of salt
A pinch of oregano
Instructions:
Combine cucumber, tomatoes, green pepper, red onion in a bowl.
Make your vinaigrette by combining olive oil, vinegar, salt & oregano in a jar & shaking it vigorously.
Pour over the vegetables & toss well.
Scatter the feta & olives over the top.
