Greek Chicken in Red Wine Sauce

Who doesn't love Mediterranean food? I am particularly fond of Greek food, having visited the islands of Crete & Corfu, and having all the intentions in the world to visit the remaining Greek islands in coming years! I love the flavours & goodness that comes with their ingredients & their manner of cooking. This recipe really is divine & easy to make!



4 Servings


Ingredients:

1 large onion, finely chopped

1kg chicken thighs

250ml Greek red wine

2 cloves of garlic, finely chopped

2 tbsp tomato paste

25cl water

400ml tin of whole tomatoes

2 sprigs of fresh thyme

2 sprigs of fresh oregano or marjoram

2 bay leaves

1 cinnamon stick


Instructions:

Heat 3 tbsp olive oil in a deep pan.

Add the onion & simmer 5 minutes until soft.

Add the chicken & brown on all sides.

Pour over the wine & reduce for 5 minutes.

Add the garlic, tomato paste & water.

Place the whole tomatoes in a large bowl & crush them with your hand for a minute or so.

Add the tomato pulp to the pan with the thyme, oregano, bay leaves & cinnamon stick.

Cover & simmer on low heat for 1 hour.

Serve with pasta & a generous shower of grated kefalotiri cheese (though parmesan is an acceptable replacement).
