Hungarian Goulash

This comforting dish from Hungary is warming & full of flavour. The beef is slow cooked in a tomato based sauce with herbs and a generous amount of paprika. Enjoy with rustic buttered bread on the side.



4 Servings


Ingredients:

50gr butter or lard

1 kg stewing beef, cut into bite sized cubes

2 onions, finely sliced

1 tbsp tomato paste

800gr tinned chopped tomatoes

3 cloves of garlic, roughly chopped

3 carrots, cut into 2 cm slices

1 tsp cumin

3 tbsp paprika

60cl beef stock

A bouquet garni comprising 1 sprig of rosemary, 2 sprigs of thyme & 2 bay leaves

300gr baby potatoes

A bouquet of fresh parsley, finely chopped


Instructions:

Melt butter in a large pot. Brown the beef on all sides before adding the onions & simmering on medium heat for 5 minutes.

Season with salt & pepper, add the tomato paste & stir well.

Add the tinned tomatoes, garlic, carrots, cumin, paprika & beef stock.

Stir well before burying the bouquet garni in the middle.

Bring to a simmer, reduce to low heat & allow to cook for 1 hour & 30 minutes.

Add the potatoes & simmer a further 30 minutes or until the potatoes are cooked.

Scatter parsley over the top when serving.
