Fiery Som Tam

This famous Thai green papaya salad encompasses the very best flavours of Thai cuisine. It is sweet, salty, spicy & sour all in one & is the perfect starter or accompaniment for a dish such as my Thai Street Chicken recipe, the link for which you can find here: https://www.ladyhatawa.com/post/thai-street-chicken



4 Servings


Ingredients:

2 tbsp sugar

3 tbsp lime

2 tbsp fish sauce

2 cloves of garlic, crushed with the blade of a knife

1 green papaya

A handful of cooked green beans, or Asian long beans if you have access, sliced into 5 cm lengths

1 tomato, de-seeded and sliced

3 chillies, finely chopped

A handful of peanuts, slightly crushed in a mortar


Instructions:

Combine sugar, lime, fish sauce & garlic for the dressing. Stir regularly as you prepare the remainder of this recipe, to encourage sugar to dissolve.

Peel & grate green papaya. Place in a bowl.

Add beans, tomato & chilli.

Just before serving add the dressing & a handful of crushed peanuts.
