Easy Chicken Ramen

I love Asian noodles... in fact, I love all Asian food. Having spent my childhood in South East Asia, my love of all things exotic began at an early age. This is a dish I make myself regularly, as an indulgent treat. For this reason, the quantities listed in the ingredient section are for 1 person. Because you're worth it!



1 Serving


Ingredients:

1 chicken breast

1 tsp ginger, finely grated

2 tsp soy sauce

500ml hot chicken stock

1 heaped tsp of sriracha sauce

1 tsp garlic, minced

1 instant noodle or a nest of egg noodles

1 tbsp red onion, finely sliced

1 tbsp fresh coriander, finely chopped

Red chilli flakes

A soft boiled egg (optional)

A lime, quartered


Instructions:

Marinate the chicken with the ginger & soy sauce for 30 minutes.

Heat oven to 200c & bake chicken breast for 20 minutes or until cooked through.

When it is nearly cooked, mix hot chicken stock with sriracha sauce & garlic.

Boil an instant noodle or a nest of egg noodles until cooked.

Place noodles in a bowl. Add red onion on one side, coriander beside it.

Place the finely sliced chicken breast on the other side & pour over the hot stock mix.

Scatter red chilli flakes across the top & add a quarter of lime.

You may add a soft boiled egg, if desired.
