Creamy Tuscan Chicken

This is real comfort food guaranteed to brighten up the gloomiest of days. To be enjoyed with pasta!



4 Servings


Ingredients:

4 chicken breasts

150ml chicken stock

2 cloves of garlic, finely chopped

1 tbsp Italian seasoning mix

250ml heavy cream

50gr grated Parmesan

50gr sun-dried tomatoes, chopped

40gr baby spinach



Instructions:

Heat a drizzle of olive oil in a pan 7 fry the chicken breasts on medium heat for 5 minutes each side.

Remove chicken from the pan & add chicken stock, garlic, Italian seasoning & cream.

Bring to a simmer on low heat before adding the Parmesan.

Whisk gently for 3 minutes as the sauce thickens.

Add sun-dried tomatoes, stir & return the chicken to the pan.

Simmer, stirring regularly, for 5-10 minutes until the chicken is cooked.

Add spinach for the last minute of cooking.
