Creamy Tuna

This is a dish close to my heart that I have often called 'poverty tuna'. Having been raised in a large family, money was often tight and meals such as this one were on the menu regularly. I learnt to cook it from a young age and not only is it cheap to make; it can be stretched by simply making more sauce; a definite plus when there are a dozen mouths to feed!



4 Servings


Ingredients:

75gr butter

75gr milk

S&P

2 tins of tuna

100gr tinned corn or peas


Instructions:

Create a Bechamel sauce by melting butter and adding flour on low heat. Whisk vigorously as you add in the milk very slowly. Once the milk has been added in, carry on stirring regularly until the sauce thickens.

Add in the tuna and corn or peas, according to your preference.

Serve on warm toast. It is equally delightful with jacket potato, pasta or rice (my favourite!)
