Countryside Winter Soup

This warming recipe has a lot of goodness & precisely the vitamins your body needs to stave off winter colds. Simply replace the butter with olive oil & the chicken stock with vegetable stock, for a vegan version of this dish.

4 Servings
Ingredients:
2 tbsp butter
1 onion, roughly chopped
2 leeks, roughly chopped
2 carrots, sliced
2 stalks of celery, roughly chopped
1 medium sized potato, roughly chopped
700cl chicken stock
Instructions:
Melt butter in a pot on medium low heat. Add the onion & leeks. Sweat the vegetables for 3 minutes then add the carrots & celery. Pour in the stock, bring to a boil & simmer on low until the vegetables are cooked through. Blend until smooth.
