Irish Colcannon

This famous Irish side dish is the perfect accompaniment to stews or roasts, & pairs delightfully with Beef & Guinness stew, a recipe that is also from Ireland and which you can find at the following link: https://www.ladyhatawa.com/post/beef-guinness-stew. Traditionally, green cabbage is used for this recipe though it is also made using kale.

4-6 Servings
Ingredients:
4 large potatoes, cut into cubes
1/2 a green cabbage, finely chopped
4 spring onions, finely chopped
2 tbsp butter to fry the cabbage
2-4 tbsp butter for the mash
A drizzle of milk for the mash
Instructions:
Boil the potatoes until they are soft.
Melt butter in a pan on medium low heat.
Add the cabbage & spring onions & cook for 3-5 minutes.
Mash the potatoes with butter, milk, S&P until smooth.
Mix in the cabbage & spring onion & adjust the seasoning.
