Chimichurri

South America, I thank you! Its just one of those things! You try this herby sauce once & its so unbelievably delicious that you can't help but plan grills & barbecues simply to have an excuse to drizzle this amazing sauce over the top of your meat & fish. It may look like pesto but it certainly doesn't taste like it. It is an explosion of flavours in your mouth!

6-8 Servings
Ingredients:
1 large bunch of parsley, roughly chopped
6 cloves of garlic, roughly chopped
3 tbsp red wine vinegar
S&P
2 tbsp oregano
500ml olive oil
Place parsley, garlic, vinegar, oregano, half the olive oil, S&P in a mixer & blend until smooth. Place chimichurri in a bowl & pour in the other half of the olive oil. Stir gently & serve at room temperature.
