Chilli con Carne

Its a classic! Beautiful with rice & why not, some guacamole on the side. I also love it as a filler for a baked jacket potato, topped with grated cheese.

4 Servings
Ingredients:
1 onion, finely chopped
1 red pepper, diced
2 cloves of garlic, finely chopped
1 tsp cumin
1 tsp paprika
1 tsp cayenne pepper
500gr minced beef
2 tbsp tomato paste
300ml beef stock
A 400gr tin of chopped tomatoes
1 tbsp sugar
1 tsp chopped marjoram (can be substituted with oregano)
250gr tin of kidney beans, drained & rinsed
Instructions:
Heat some oil in a pot & simmer onion on medium low heat for 2 minutes. Add red pepper & garlic. Stir well then add the cumin, paprika & cayenne pepper.
Simmer 5 minutes before adding the minced beef.
Fry until the minced beef is browned then add tomato paste, beef stock, tinned chopped tomatoes, sugar & marjoram.
Cover & simmer on low heat 20 minutes.
Add tinned kidney beans & simmer another 10 minutes.
