Chicken with Cherry Tomatoes

This is a really tasty, quick dish to make for a weeknight dinner when you just haven't got the energy to go at it in the kitchen. I was inspired to make this dish on such an evening, after I had collected a bug basket of cherry tomatoes from the garden.



4 Servings


Ingredients:

1kg chicken thighs

1 onion, finely chopped

2 sprigs of thyme

2 cloves of garlic, finely chopped

500gr cherry tomatoes, sliced into halves

S&P

200ml chicken stock

2 tbsp wine vinegar

150gr fresh spinach leaves


Instructions:

Brown chicken in a little olive oil for 10 minutes, turning regularly.

Add onion. Fry on medium heat 2 minutes then add thyme & garlic.

Add cherry tomatoes, S&P. Stir before adding chicken stock & vinegar.

Cover & simmer 30 minutes on medium low heat.

Remove thyme branches & simmer uncovered for a further 5 minutes.

Add spinach & simmer 2 minutes, or until just wilted.

Serve with rice, mash, pasta or just a chunk of baguette.
