Chicken Broth Soup

Simplicity is often best. This soup certainly falls into that category and is an easy, quick meal to whip up on a cold winter evening. It is also perfect for younger children and has been one of my daughter's favourite meals from a young age.



4 Servings


Ingredients:

500gr chicken breasts, diced into small cubes.

2 tbsp butter

1 tbsp flour

2 stalks of celery, finely diced

2 carrots, finely diced

2 cloves of garlic, minced

1 litre chicken stock

A glug of apple cider vinegar

Salt & pepper


Instructions:

Melt the butter & brown the chicken breasts for 2 minutes.

Add 1 tbsp flour & fry off for minute before adding the carrots, celery & garlic. Give it all a good mix, then pour in the chicken stock, vinegar and seasoning, taking care not to add to much salt if you are using stock cubes, as they already contain high levels of salt.

Allow to simmer on medium low 30 minutes and enjoy with buttered baguette or rustic bread on the side. Do not resist the urge to dunk your bread into this beautiful broth!
