Chicken, Bacon & Spring Onion Jacket Potato

A quick, delicious idea for lunch. This filling is also delightful as a sandwich filler.

2 Servings
Ingredients:
2 chicken breasts
1 shallot, roughly chopped
1 clove of garlic, roughly chopped
1 chicken stock cube
50gr bacon
2 spring onions, finely chopped
Mayonnaise
Juice of 1/2 a lemon
S&P
Instructions:
Place chicken breasts in a pot with shallot, garlic & stock cube. Cover with water & bring to a boil. Simmer for 20 minutes or until cooked through.
Remove chicken from the broth & shred. Allow to cool.
Fry bacon until cooked through & finely chop. Allow to cool.
Combine the chicken with the bacon, spring onion with mayonnaise (to your liking), lemon juice, S&P. Refrigerate until cold.
