Celeriac Remoulade

Celeriac is a lesser known root vegetable but one that is very versatile & great for your health. This is a very popular way that we prepare it here in France, as a remoulade which can be eaten in many ways. For example, cold as a side salad, topped with prawns as a starter or combined with ham in a sandwich.



2-4 Servings


Ingredients:

2 tbsp cream

1 tbsp Dijon mustard

2 tbsp olive oil

1 tbsp apple cider vinegar

Juice of 1/2 lemon

500gr celeriac, finely grated


Instructions:

Whisk together all ingredients except the celeriac. Grate the celeriac and mix with the dressing immediately to avoid discoloration.
