Cauliflower & Cashew Nut Yellow Curry

For all you Vegans out there, or those like me who like to have 1 meat free day per week, here is a simple, great recipe that is delicious!

2-4 Servings
Ingredients:
1 cauliflower, sliced into 'steaks'
A handful of unroasted cashew nuts
2 tbsp of Thai yellow curry paste
400 ml tin of coconut milk
1 kaffir lime leaf
1 tbsp tamarind sauce
Instructions:
Heat oven to 200c.
Drizzle olive oil on an oven tray, add the cauliflower slices, S&P.
Turn cauliflower over so both sides are coated with a little oil.
Roast for 20-30 minutes or until cooked but still firm.
Using a separate tray, roast cashew nuts for 3-5 minutes.
In a pot, heat a tbsp of oil & fry off Thai yellow curry paste for 1 minute.
Add coconut milk, the kaffir lime leaf & tamarind sauce.
Simmer 10 minutes.
Serve rice topped with cauliflower & a drizzle of curry sauce.
