Caribbean Beef & Potato Curry

I love this warming, spicy dish. It takes you away on holiday, somewhere warm & sunny with beautiful people & music that makes your heart sing.



4 Servings


Ingredients:

2 large onions, finely chopped

6 cloves of garlic, finely chopped

1kg beef, cut into bite-sized pieces

2 tbsp curry powder

1 tbsp allspice

2 tbsp tomato paste

2 sprigs of thyme

500ml beef stock

800ml coconut milk

S&P

2 large potatoes, cut into 2cm cubes

Fresh coriander, finely chopped


Instructions:

Simmer onion & garlic with a drizzle of vegetable oil for 5 minutes.

Add beef & brown on all sides.

Add the curry powder & allspice. Mix well & add tomato paste.

Fry off 1 minutes before adding thyme, beef stock, coconut milk, S&P.

Simmer for 1 hour with a lid on.

Add potatoes & simmer until potatoes are cook (roughly 20 minutes).

Serve with rice & a generous scatter of fresh coriander.
