Irish Beef & Guinness Stew

I love Ireland & all things Irish, from their charming accent to their pubs, stunning coastline & of course, their cuisine. I first tried this recipe in an old pub in Dublin & it came accompanied by colcannon, a cabbage & potato mash. You can find the recipe for colcannon here: https://www.ladyhatawa.com/post/colcannon



4-6 Servings


Ingredients:

2 tbsp butter

2 tbsp olive oil

1kg stewing beef

2 tbsp flour

1 onion, roughly chopped

50cl can of Guinness stout

1 beef stock cube

6 carrots, peeled & cut into 4 cm pieces

3 bay leaves

1 tbsp thyme


Instructions:

Heat oven to 180c.

Melt the butter in a casserole dish & add the olive oil.

Brown the beef on all sides on medium heat.

Add flour & stir well for 1 minute before adding the onion.

Stir before slowly adding the Guinness, stirring constantly as you do.

Add the stock cube, carrots, bay leaves & thyme.

Bring to a simmer, cover with the casserole lid & place in the oven for 3-4 hours, until the beef is soft & melts in your mouth.
