South African Beef & Butternut Stew

This beautiful dish from South Africa is packed with flavour but requires very few ingredients & is incredibly easy to make. Enjoy!



4 Servings


Ingredients:

2 onions, roughly chopped

2 cloves of garlic, chopped

800gr stewing beef

2 cinnamon sticks

2 bay leaves

600ml beef stock (or enough to just cover the ingredients in the pot)

600gr butternut squash, cubed


Instructions:

Heat vegetable oil in a large pot & add onions, stirring regularly as they simmer for 3 minutes on medium high heat.

Add garlic, beef, cinnamon sticks & bay leaves.

Brown the beef on all sides before adding the beef stock.

Bring to a boil, cover & reduce heat to low.

Simmer 1.5 to 2 hours, until beef is tender.

Remove cinnamon sticks & bay leaves.

Add butternut squash & simmer approximately 10 minutes until butternut is soft.

Serve accompanied by rice.
