Banana Bread Cake

What a delight this classic cake is. Beautiful warm with a cup of tea or even cold with a drizzle of yogurt or warm custard.



4-6 Servings


Ingredients:

240gr flour

1/2 tsp baking powder

3/4 tsp baking soda

1/2 tsp salt

120gr sugar

60gr butter

2 eggs

1 tsp vanilla

60gr plain yogurt

2 bananas, mashed

Poppy seeds

2 tbsp chopped walnuts


Instructions:

Heat your oven to 180c.

In a first bowl, combine the flour, baking powder, baking soda & salt.

In a second bowl, cream together the sugar & room temperature butter until smooth, then add the eggs, vanilla & yogurt, followed by the mashed bananas, mixing well after each new addition.

Gently combine the two bowls by gradually adding the dry ingredients to the wet ingredients, whisking to avoid lumps.

Add in the poppy seeds and walnuts. Place the batter in a cake tray that is either greased with butter or lined with a baking sheet.

Bake on 180c for 45 minutes.
