Asparagus Soup

I just love asparagus, both green & white, in every form from steamed to grilled to jarred. You can use either type of asparagus for this soup. It is rich, creamy & perfect with a few slices of buttered baguette on the side, to dunk into the soup.

2 Servings
Ingredients:
500gr green or white asparagus, sliced
250gr potatoes, cut into small cubes
1 onion, sliced
700ml water
1 vegetable stock cube
1/2 tsp pepper
Salt
10cl cream
Instructions:
Combine all ingredients in a pot & bring to a boil on medium heat.
Reduce the heat to low & simmer uncovered for 20 minutes.
Blend until smooth & stir in the cream.
Add salt if needed.
