15 minute Creamy Chicken & Spinach

There are those days when we just do not have the time to make full on dishes. This is one of my go-to recipes that the whole family loves, and even my child will eat. If anyone in your family doesn't like spinach, you can add peas instead. You can also replace the white wine with 10cl water & 1 tbsp apple cider vinegar.



4 Servings


Ingredients:

500gr chicken breast, cut into bite sized pieces

1 onion, finely chopped

2 cloves of garlic, finely chopped

10cl white wine

1/2 chicken stock cube

Pepper

1 heaped tsp Dijon mustard

10cl water

25cl cream

150gr fresh baby spinach leaves


Instructions:

Heat a little olive oil in a pan.

Add your chicken & brown for 4 minutes on medium heat.

Add the onion & garlic. Fry for 1 minute before adding the white wine.

Cook off the wine for 1 minute then add the stock cube & season with pepper.

Add the mustard & water.

Allow to reduce 2-3 minutes before adding the cream.

Bring to a simmer then add the spinach, stirring regularly for 1-2 minutes until spinach has wilted & sauce has thickened.

Serve with rice or pasta.
